Three cheers for rhubarb season! Are you a fan of rhubarb? I can’t get enough of it. I can’t stop. I WON’T stop. Rhubarb muffins, rhubarb coffeecake, strawberry-rhubarb jam…get in my belly. But my favorite, hands down, is rhubarb pie. This quick and easy rhubarb pie is a classic. I make it every year and it does not disappoint.
I get by in the kitchen, but I’m definitely not known for making beautiful baked goods. It’s not my gift. Y’all, I am NOT the Pioneer Woman.
Let’s just say that I have a “rustic” style when it comes to baking…which is a nice way of saying that things usually don’t look at all the way they’re supposed to. 😉 There are no Food Network-worthy baked goods coming out of my oven. I’m totally ok with that, as long as they taste good.
This pie goes together in a snap, especially if you use this amazingly simple pie crust that I am obsessed with. I’ve made it a few times now, and it has always turned out perfectly. I’m out of shortening and have been for a while, and I love that this crust only calls for flour, water, butter and salt. Perfection.
Serve it with whipped cream or ice cream. Or both. 😉 We’re split on this issue at our house. Mr. Cozy House has to have ice cream with his pie. But I’m Team Whipped Cream all the way.
Easy Rhubarb Pie
- 1 single pie crust
- 3/4 cup sugar
- 1/4 cup flour
- 1/2 teaspoon ground cinnamon
- 4 cups fresh sliced rhubarb
Crumb Topping Ingredients
- 1/2 cup flour
- 1/2 cup brown sugar, packed
- 3 tablespoons butter
Prepare and roll out pastry for single-crust pie. Line a 9 inch pie plate with the pastry. Trim and crimp edges. Set aside.
Prepare crumb topping. Stir together flour and brown sugar. Using a pastry blender, cut in butter until it resembles coarse crumbs. Set aside.
In mixing bowl, combine sugar, flour, and cinnamon. Add rhubarb. Gently toss til coated.
Add rhubarb mixture to pie plate. Sprinkle topping over the filling.
Bake at 375 degrees for 25 minutes, covering the edges with foil to prevent over-browning. Remove foil. Bake for 25-30 minutes or til top is golden. Cool on a wire rack.
